How many forms I need to fill?

I am married and I am the principal applicant. No kids. Filing at Buffalo...
1) Do I need to fill 3 immigrant application forms or 6 ( 3 for me and 3 for my husband) ?
2) Is bank account statement(past 2-3 months) enough or do I have to get any letter from financial institution?

You have to fill 2 separate application.

No need for bank statement right now. but, when your interview will be arranged(for example after 8 months), you will be asked to submit last 6 months bank statement. that will prove that you are capable to spend $10000 (for you) and $2000 for each dependent on you.
In your case, you need to show atleast $12000(at interview time, not now). You may show them your ornaments assets, and car title etc. also to prove your capacity to spend almost $12000 during unemployment after entering in canada.
