Please help me. I am from India and on H1 B. Is it possible to change jobs after I get I -140 approved? or will I be stuck in the job I take till I get my green card which for India currently is >8 years in EB 2.

You can transfer your H1 even after I 140 is approved. I 140 approval does not give any immigration status.
