Ability to work in USA on the Visa Waiver program

I am looking to come to the USA on the Visa Waiver Program and work within the bar and hospitality industry. It is not very clear on the payment regulations only stating that I cannot recieve monies from a US source.

Does this mean I cannot be paid directly by a US bar or restaurant? and are there any ways around this?
