My Fiancé lives in Illinois and I would like to know to which USCIS service centre should he file my petition?

You don't have a choice. Mail your K1 petition package to:
USCIS
P.O. Box 660151
Dallas, TX 75266

That office will route your package to any of the other 5 processing locations based on their workload and/or your location (California, Vermont, Nebraska, DC, Texas).
