Vacation when my advance parole card comes in?

Afternoon,

So my wife Is currently here on DACA, so she came to the USA unlawfully when she was a child. We have gotten the Military Parole in Place approved so she has an I-94 showing arrival now. We have submitted all the paper work IE (I-485, I-130,I-131,I-765 & I-864) They have cashed our checks. So my question is if we get her a Mexico Passport and when her card comes in with saying allow entry into the united states can we vacation to Europe while the green card process is still going on & be allowed to enter back into the USA?

In theory, yes.

But it might be a good idea to postpone the vacation a little bit (AOS shouldn't take that long anyway, and vacation isn't that urgent) if you don't want any risks.
