Trip insurance for cruise in Australia

Dear Sirs,
I am planning a 28 day cruise in Australia. The cruise leaves in mid Nov 2008. I would like to know how to insure it in that I must put a down payment now of appeox 20% and the balance 3 months before leaving.
Total cost of trip $10.000 x2
Down payment $2.000 x 2
Do I do 2 policies, one for the down payment and then later one for the remainder??
