After 4 long years, AAO sustained my appeal and reversed the I-140 denial. The reason for denial was education based -- I completed my 4-year Bachelor of Engineering degree in 3 years; in the denial notice, the officer interpreted this as a 3-year degree and [incorrectly] concluded that it did not meet the requirements stipulated in the labor certification.
Posting this in case it gives some hope to others who are in a similar situation.

Dec 2008: I-140 denied, MTR/Appeal filed via form 290B
Nov 2012: Appeal sustained, I-140 approved, I-485 reopened
