What are the rules on UK citizens working and receiving payment in the USA 3-4 times per year and staying a month per visit. Are the rules different if working and receiving payment in Canada and New Zealand.

You can't legally work in the U.S. unless you have an employment-based visa. Canada and New Zealand have different rules, though similar to the U.S..

zAn employment-based visa is not restricted to specific states; it's good for the entire U.S., Puerto Rico, Virgin Islands and Guam.
It's not trip-restricted, but is for a designated period of time, i.e., 2 or 5 years,etc.
