Urgent STEM Extension-Need Suggestion

Hello All,
I am on initial OPT right now and working for a company but my OPT is expiring on 12th FEB 2018 so I need to file STEM EXTENSION now in December.
But I have got new job and the joining is on 2nd of Jan 2018.
My question is-
1- Can I file my STEM extension with new employer?
2-Do I need to change OPT form also in my university website or just need to fill the STEM Extension form?
3-My joining is in JAN so if I fill all forms for STEM extension and apply - then my number of days will count as unemployed?

OK , here this works well the first thing u have to do is update the new employement to university and get an I-20 first
next ask the new employer to get ur I-983
and u r extension is on feb 2018 u will not be in any of the out of status
FYI u will get out of status if ur not working in opt extension for a period after 60 days
submit it to ur DSO u will be fine .
