H1B - change of status in Canada

I got my PhD in US and continued working here as an assistant professor.. I just received my H1B approval and I was wondering if I can go to Canada for a change of status from F1 to H1b since the first available date for H1b stamping in mumbai is September .. I am pretty sure I will get the 221g slip as I am a scientist...so I was wondering if I can appear for an interview in canada but still travel to india while my case is pending with the consulate..and return back to canada when they ask for my passport? Any suggestion would be appreciated.
