My son has lodged all the appropriate paperwork since marrying a US citizen 3 days ago. He is currently on a B2 visa that runs out in 8 days. We had legal advise months ago that he can stay in the US for 2 months while his adjustment of status is been processed, is this right? Does he need to do anything else to ensure that he can't be done for staying in the country passed his visa expiry?

There is no "2 month" requirement. Once the petition and Adjustment of Status has been submitted for your son, he is in a "protected mode" from penalties associated with his visitor visa overstay.

There is no need to worry and he is an protected mode with legal authority. Although you have been applied for new paperwork and it will cover up to live in safer mode
Thanks
