I wanted my mother to apply for visit visa for coming to USA. Her interview date is after 2 weeks. I wanted to know if i get the visitors medical insurance will you be able to send me a letter stating the coverage person's name and that she is having the coverage. Thanks!

Yes, we can get you a letter like that, but that is not necessary. It is enough if you print all the documents that you get in the email, as those are acceptable proof of insurance to the embassy/consulate.
