Do I mail Two Medical RFEs for Spouse?

During last week we received two RFEs for our case. One for each of us. We need to supply them a new Form I-693(medical exam).
Besides that, on my RFE, it also requires to provide proof of shared life together (joint bank account, birth certificate(s) of child(ren) born to the spouses etc.)
We were told we can mail these evidence by ourselves.
My question will be: after gathering all these documents.
1. Should I reply them in two separate mail packages, One for me and one for my wife?
2. The return address on the RFE is a P.O Box, Should I use USPS Priority Mail with Certified Mail and Return Receipt or I can consider FedEx/UPS as well?
