Here is my timeline :
EB3 Priority Date - JAN 2008
Changed Employer in 2017 and hence started the PERM/I140 Process Again - Recaptured the Priority Date. The following timeline is from my reapplication process

08/20/2018 : PERM FILED
12/07/2018 : PERM Certified
02/08/2019 : I-140 FILED in PREMIUM
02/14/2019 : I-140 Approved / Prior Priority Date (JAN 2008) Captured
05/2019 : MEDICAL Done
05/15/2019 : I-485 Adjustment of Status Filed (With I-765 EAD + I-131 AP)
07/24/2019 : Biometric Appointment
09/16/2019 : I-765 + I-131 EAD-AP Combo Cards Approval Recieved (Actual Cards Recieved on 09/23/2019)
09/24/2019 : RFE Recieved for I-485 - Attorney had not submitted the Supplement J Letter
10/04/2019 : RFE Responded with Signed Supplement-J Letter
11/04/2019 : I-485 Final Interview Notice Received (For 12/04 Appointment @ Santa Ana, CA)
12/04/2019 : Interview @ USCIC Santa Ana, CA Field Office, I-485 Approved and a Temporary Approval Letter handed. Same day the Online Case Status Changed to "New Card is being Produced"

Here's a short summary of my Interview experience:
Interview was scheduled for 10:00 AM while we reached the office premises @9:30 /am during heavy rains.
Waited outside in line for 10 minutes for Security Check (Had to hand over Belts, Bracelets, Cellphone, Wallet etc).
Went to the 2nd floor office and Checked In with our Appointment Letters. Both Index Fingers were scanned and a webcam photo was taken. We were asked to be seated until our name was called. There was quite a rush and many folks who even came after us were being called in. Our turn came at around 1040AM. The officer greeted us nicely and took us into his room and also apologized for the wait. He said he was just arranging and reviewing all the docs before we came into the room so that our interview is not too long. We were then asked to take oath and then went over the customary YES/NO Questions (All NOs obviously for us). We also had to a make few corrections here and there without any issues. The officer also asked me about my Job Duties and How did we celebrate our last anniversary. He also collected all the documents that we had brought (Without asking for any specific one). He returned the Originals after a quick check and kept the copies. I then told him that I received a minor Cellphone Citation after filing the I-485 (I was carrying the proof). He told me that this was not required as it does not change your eligibility. Just because I mentioned it, he said he will put a small note but will not change the Response to #25 as it is to not a crime. Finally he asked if we had any questions. I looked at my wife with curiosity, when he smiled and said, you can say No. I asked him , when can we know the status of our GC, to which he gave us the much awaited news, that he had already approved our cases and he even had the Approval Letter Printed before we came. He just wanted to go over the process with us before telling. He then congratulated us and walked us out after taking a copy of our passports from his own copier.
