K1 Visa 221g issued

I am not sure where this missed. But, between the NOA2 and to NVC, the NVC did not send me a notification to upload the documents nothing and any instructions. So, my fiance took all the documents along with her for the interview. But, the officer did not ask all that and finally gave her this 221g stating that there are insufficient documents. Now, we are taking it to NVC on Monday to submit it. I already planned that if she has her interview on 21st, she should get her Visa by Feb 28th, and she can fly soon and so I booked her ticket on March 2nd. Unfortunately now with this being delayed, I am not sure as the Officer is aware she is booked to fly on March 2nd, and we also have our wedding planned on March 11th in Hawaii which she showed also. But, we are worried that after we submit it on Monday how soon it will be reaching the officer and will they even take her passport for stamping or not? Because Saturday is her flight. I was too quick to book the tickets as we planned for our wedding.

But in the 221g section it states it takes around 60 days for the status to be known, but since the officer is aware of this, do you all think she would approve it after seeing the documents and we will get our passport with Visa stamped before Saturday? Just a thought guys. Anyone been in this DIRE STRAITS before?
