I am flying on 24th December with my family and I paid $4000 for the tickets, now getting Canada Visa on time was very important to me.
After reading many posts on this forum I decided to fly to LA from Texas just to drop my passports with pre-paid next day UPS shipment label, sounds stupid but I end up saving money and other hassles.

Here is the overall process timeline:

Day 1) November 28, Wednesday: Submitted the online application for Visitor Visa (I thought 2 weeks should be enough for Canada to process - but I was wrong, realized after submitting an application)
Day 2) November 29, Thursday: Application status updated: Under review
Day 3) --
Day 4) --
Day 5) --
Day 6) December 03, Monday: Request for passport
Day 7) --
Day 8) December 05, Wednesday: In person, passport drop off at LA, VAC
Day 9) December 05, Wednesday: Passport sent to IRCC office
Day 10) December 06, Thursday: Under review
Day 11) December 07, Friday: Finished stamping, and passport sent back to LA VAC
Day 12) --
Day 13) --
Day 14) December 10, Monday: Envelope processed at LA VAC and shipped
Day 15) December 11, Tuesday: Received passport in the morning!
