Adjustment of Status - I-485

So my RFE never came in and I re-requested it and it was still sent to the wrong address. Apparently this is keeping back both my applications. The initial RFE was sent around June 7th and it told me wait until July 9th. I've waited all that time only to hear it was resent again and is still delayed. Desperately waiting for at least the EAD so I can work.

Anyone been in a situation like this?

Also, I came in on a K-1, I submited AOS and EAD application but didnt for AP because of the way it was structured. Can you only apply for AP if you have an emergency? and then wait until you receive it? I have ailing family back home and God forbid something where to happen will I be stuck here? Can we apply for it just to have in the event of something? All the talk about not being guaranteed an entry upon return had me concerned so I didn't submit.

Any advice?
