October Filler, RFIE Received!!! Please HELP

Service Center: MSC/NBC
Priority Date: October 27, 2017
Application: I485, I130, and I765

So, we have received the request for initial evidence which was sent out on March 6, 2018. It was with regards to tax return information. Here is what it basically says:

"the petitioner/sponsor on form i 864 affidavit of support, must submit a complete federal income tax return submitted to the internal revenue service (IRS) for the most recent tax year. If you were not required to file a federal income tax return under U.S. tax law, attach a written explanation of why you are not required to file".

My wife has not been making enough money, and this year I think we filed jointly. So, since this is a new tax year, we have a few concerns that we hope you might be able to help us with:

1) Since we had just filed for taxes recently, do we send them this most recent 1040EZ? If so, does that mean we need to send in a new I-864 form since the numbers won't match otherwise?
2) In case we needed to provide a written explanation, is it free style or are there particular specifications for it? Any form recommendation is helpful!
3) What evidence other than W2 can be provided to support our claim that my wife was not required to file taxes previously?
4) I did not send in my medical examination when I first filed, should I send it with this RFIE?
