Adjustment of Status - I-485

Hello Everyone, this comes with a surprise as I received my interview appointment letter yesterday. I'm surprised because I'm a New York filer and married to USC and I only submitted by application in January. This is my timeline below;

Application submitted: January 02, 2018
PD: January 09, 2018
Biometrics: January 31, 2018
RFE: January 30, 2018
REF received: February 15, 2018

I'm yet to received my EAD as my account hasn't changed ever since.

I will need your advices and experiences on this situation. My wife and I are currently unemployed, so we don't have much to show as proof such as lease/house rent receipts, utility bills, rental and medical insurance etc, because we live in a room in shared apartment in which the bills doesn't have our name on it.
I'm considering renting a new place before the interview so that the lease can have our name on it or having WiFi in place as a utility but I don't know if there are good options to explore now.

Please I will need your advices on how to gather supporting documents to show proof of our marriage.
