Adjustment of Status - I-485

Hi, I just wanted to know if anybody here has filed I-485 with Seattle office and what is the current month being processed for interviews for family based application.

Here is my timeline (I-485 + I-130 + I-765 + I-131)
* 1/02/2018 - Medical completed
* 1/17/2018 - Case filed with USCIS
* 1/29/2018 - Received I-485, I-130, I-765 and I-131 Receipts from USCIS
* 2/16/2018 - Biometric completed
* 3/19/2018 - Case ready to be scheduled for an interview
* 6/27/2018 - AP + EAD combo card received (expiry - 6/21/2019)

It's been over a year since I received the update that my case is ready to be scheduled for an interview. No updates since. Current processing time on USCIS website says July/August 2017.

I'm still contemplating if I should submit AP + EAD extension or just wait. I already hold a H-1B (employer based visa) which allows me to work until Oct 2021. AP + EAD card doesn't really add any purpose to my status.

Also I think there was an update to the policy stating that effective Nov 1, 2018, the I-693 medical report will be valid for two years from the date of submission to USCIS (not one year as it was before Nov 1). Is this applicable to me & thus eliminate the probability of rfe needing to renew my medical?

Any insights or suggestions would be greatly appreciated.
