Just had my interview in Nashville so here is my timeline to help anyone out. Let me know if anyone has questions. I can list what we took as evidence if that would be helpful...
Current EAD expired July 5th.
Priority Date: February 25, 2019
Concurrent filing. Spousal. Medical Included.
Current EAD expired July 7th.
I had previously been on a J1 visa and had lost the DS-2019.
As proof of no 212(e) I submitted FOIA responses from USCIS, ICE, Department of State, and the sponsor organization. Also attached 2 letters from the sponsor organization stating the program receives no funding from the US or UK governments.

June 4th, 2019
Made EAD expedite request.
June 6th, 2019
Submitted evidence of severe financial loss for my company
June 15th, 2019
RFE for 2018 taxes and corrected I-864. (Typo with household size)

My new card is being produced
About the interview:
-Asked to see both of our Birth Certificates and Marriage Certificate.
-Asked my wife the I-130 questions and wen through that form.
-Asked for any extra evidence we would like added to our record.
-Handed over new car and renters insurance policy, this month's joint account statements, copy of new car title with both our names, phone bill.
-Asked for information about our marriage. Meeting, moving in together, proposal, wedding, and who attended.
-Asked when my wife has visited my family.
-Told us they didn't need any more photos.
-Told us they would make a decision today or tomorrow and the online tracker should reflect that soon.
-Total time around 30 minutes.

I think the courtesy letter say that you should bring the sealed envelope to your interview. An RFE sometimes ask to mail it, drop it personally or bring it to the interview, but it will explicitly say what you need to do.Nov 2018 - Package sent - EB - Texas Service Center

On September 30, 2019, we scheduled an interview for your Form I-485, Application to Register Permanent Residence or Adjust Status, Receipt Number MSC........... We will mail you an interview notice. Please follow any instructions in the notice. If you move, go to www.uscis.gov/addresschange to give us your new mailing address.
My PD is 3/22/19. I do not know the exact interview date yet. I am so excited!!! Will update when I get new status.

Hey guys,
I know how anxious the process is and the fact that USCIS does not really update everyone's status makes it worse. Currently, I am in the process and below is my timeline in case someone filed in similar days from me.
May 16 - forms were received
July 15 - they inquired for more documents
Sept 11 - fingerprints taken
Sept 30 - interview for Nov 4 in Nashville
Oct 3 - EAD and AP approved and should get my card in the mail soon
I will update once I get more things. I was not gonna share my timeline, but I know how anxious the process can be. I have my best friend's wedding in Oct 26 and we are hoping that my wife and I can go, granted that the card arrives on time, so fingers crossed.
