I have approved EB1. I will be applying for Adjustment of Status in the US, while my spouse is outside US. So, what form and when should she apply for Consular Processing?

You should file I-824 with your I-485 or when your I-485 is approved. The I-824 lets them know that, once your I-485 is approved, the approved petition should be sent to NVC and the consulate to start the Consular Processing for your derivative beneficiaries (e.g. your spouse).
