I am currently employed on H1B - my husband's company recently filed for his GreenCard application, and we have both received our EAD cards. We have not received our GreenCards yet. I wanted to know if it's possible for me to be legally in the country on an EAD if I were to quit my current job? Many thanks and look forward to hearing from you.

I assume that you have received EAD card based on filing the I-485 (Adjustment Status) based on your husband's employment based green card.
In that case, you can leave your job and remain in the country legally based on pending I-485. You can work based on EAD you received, and if you were to travel outside the U.S., you can travel back into the U.S. based on Advance Parole (assume you have that too. If not, you need to get it for travel in and out.)Immihelp Support
