We are in UK and need to file I-751 before GC expiry on September 27th. As we can't go back to the US yet I was thinking of mailing the forms from the UK directly to USCIS. Or would it better to send to a friend in the US and have them send them to USCIS?

We are looking to go back around the second week of August so I could wait until we are in then but I worried about leaving it too long.

Also, is it likely my wife will have to go to a biometrics appointment even if she already did that on the initial adjustment of status application?

I would send it through a friend who can mail it once in the US
Be sure to list your US address on the forms and note that your biometrics appointment may be scheduled within 3 weeks of filing.
