It is recommended to do a cover letter that includes all the things that you are sending. Also if you feel that any evidence will create any doubt, then you should give an explanation. For example if you are filing taxes MFS you should explain. You want to avoid any red flags.

For both my I485 and I751 I did not submit a covering letter. It did not cause any issues.

I did not send a cover letter but sent a very detailed Table of Contents listing all the evidence and what the evidence is proof of; i.e., evidence of cohabitation, commingling of finances, etc.
