L1A + GC just applied - switching jobs

I am on L1A and my employer filed my GC last month under EB1.
My wife is on L2 and also has her L2 -EAD.
Employer has filed for I-140, I-485 and EAD for me and i-485 for family.
There seems to be some layoffs happening in my company and I wanted to be prepared just in case...
I had the following questions:

1) At what stage of GC processing can I switch jobs and continue the GC processing.
2) What happens to my spouse's status if I switch and what happens to her L2-EAD? Is it still valid?
3) If I need to return to my country for sometime, can my spouse continue on her existing L2-EAD?

You can't really do that you are on L1A and you have qualified on that basis for EB1. If you change employers, you will no longer be on L1A.

She has L2 and EAD as long as you are on L1.
