My situation is as follows: I am German, my wife is American. I came here is a graduate student and am working legally as part of the F-1 optional practical training program. I'd like to apply for a green card, however, my wife is a student and has no income. I'd like to avoid having a co-sponsor. I on the other hand have a very well paying job. Can my income be used for the green card application?

Yes you can suppliment your income even your spouse income do not qualify. See i864 instructions- page 9 , point #6. It explains that you can add up your income.
