I am applying for a green card for my mother who is Russian, I am US citizen. We got all documents and everything approved and where told to wait for an interview invitation in Poland. My mother also has a tourist Visa. Is it possible to come to US and have that interview here instead?

No. The process of getting a green card from within the US is Adjustment of Status, which is a separate process from Consular Processing which is the process of getting a green card from abroad. If she were in the US, she could file I-485 for Adjustment of Status. However, she cannot enter the US on a visitor visa with preconceived intent to apply for Adjustment of Status during that stay.
