I currently have a single entry Schengen visa. If I decide to visit more than one country, what is the process of converting my single entry visa to multiple entry?

Once you enter Schengen area, you can visit all the Schengen countries within it, even with single entry.

But I want to spread my visit over the weekends between UK and Schengen countries. I'd need multiple entry visa in that case. How can I convert my single entry to multiple entry then?

You can't convert like that. You will need to apply again.
