what should I write on this form if there is no paper trail regarding employment and have been paid under the table...working at an underground poker house.

I would guess that not telling the truth on an immigration form is worse than being paid under the table. If you are the immigrant and the work took place outside the US, I don't believe it would be held against you. I don't see any reason why they even would try to verify the employment history for K1 applicants.

You are going to have to put that under the occupation on G-325a for your fiancee. Even you put something else, they may ask her to produce evidence/proof during the interview. Is gambling legal in Korea? I guess it's much better than prostitution. we're both korean, we're both the same age, and i don't want this petition falling through because of her work history.
Don't worry about the profiling... that's why they have the interview. Just tell the truth as much as possible, they've seen thousand of people and are trained to see if someone lying within the first minute of the interview.
