I work odd jobs for cash, dont use banks, havent reported income. Are all the documents mentioned on the sponsor info page absolutely necessary for fiance visa? Could my mother or mentor with these credentials do the sponsoring? Or do I really just need to get on the grid?

As far as I know, since you're going to be the primary sponsor, you have to file the I-134. I'm assuming that's what you're referring to. Of course, you can say that you're going to get financial help from family members.
As for the income requirements, you can get some kind of official "company letter" or "job letter" from someone saying that you work for them. Indicating salary, position, and details. Remember the I-134 isn't legally binding as the I-864, so it's usually less critical. You can also write a statement saying that since you just started working you're going to file your taxes starting next year (or something to that effect). If you're sure by the time your fiancee arrives in the US, that you'll have everything in order for the I-864, then I believe you can go ahead with the I-134.
