so once you have married and submitted paperwork and get the conditional greencard thing that you get, can you work. I see that at that stage you can apply for a social security number etc, but does this mean you have unrestricted access to employment?

Not quite. You are still not able to apply for jobs that require US citizenship. Other than that, yes, you can work anywhere you want to.
