ok, if I resign from the present employer and join another employer, can I ask a copy of the same for my records in the future?

I think if I go for stamping based on this employer H1 approval, then ultimately I need a copy of I-129 petition. am i right?

Your 797 should be good

you shouldn't need 129 for any reason

to answer your question, it's your employer's right not to give you the copy, but then again since you can do without it, why bother?
