Many doubts in my documents Please Help me

1) My employer shows me having "around 3 years of experience" while applying for petetion . I was having only 1.9 at that time.(APRIL 1 2008) .
When I attend the h1b interview if they ask me the experience how much should I tell?

2) What are Education Evaluation Documents who will provide it ?
3) What are W2 documnts . who will provide it ?
4) I do not have any of the following documents like...

Market analysis,Client End letter, Client Itenarary of services, Client Project Description

My employer told that I wil be working in Inhouse project and hence I will not get these documents. Is this fine ? Can i answer that I will be working for the inhouse project which is being developed for the company.

5) My employer gave a sealed envelope which should be opened only by the consulate . What is that ?

6) I donot have the following documents too..
notarised document containing all employee names,
unemployee wage checklist.
my employer say that they would give both of these if at all consulate puts a query

Please explain me what to do wrt my above points.. Any one of you please help me...
