I did not get the stamping in mexico.. just crossed the border to get the new i-94 and start the employment. yes you are right, i didnt get the i-94 with the i-797.
VO asked why i was out of status and said it was fine as it was for a short period of time. I think it really depends on the VO.
good luck. I wanted to be honest and tell them the facts. I got the feeling that they dont look for reasons to reject the visa but accept good reasons for such cases.
Note: This is just my experience and it really depends on the VO
