For a green card holder who has employment outside the US, what address does one need to enter on page 1 Form 1040 and on the FBAR (Form TD F 90-22.1) ? Should one enters the foreign address or the US address ?

You may enter a U.S. address or a foreign address for the 1040 and the TDF 90-22.1. Just make sure it's an address that you can receive mail on a timely basis.

That's also my thought, the US address will be much more reliable in terms of delivery of mail, so the US address is preferred in this case.
But, if the US address is used in the Form 1040, will it prevent the tax payer from excluding up to $250,000 of the profit from selling his overseas home ?
(assuming the tax payer meets the other requirements, ie owns the foreign house and lives there at least 2 out of the 5 years, employed in that country, has utility bills on that house with his/her name, has property tax bill on the house, has a bank account in that country, etc.)
