When I proceed with the visa fee payment via NEFT, it shows "Amount Valid Until: 02/06/2021" which is 6th Feb. Does that mean I should schedule my appointment before 6th Feb or the appointment date should be before 6th Feb?

It ideally means that you need to book an appointment before 6 Feb. I am not sure if you can reschedule the appointments if the MRV validity date is expired. This means you need to pay the amount by that date. The USD-INR rates keep changing & the temporary account number generated is only for you & it will be deactivated by that date.
