Is employment letter of sponsor necessary for visitor visa interview

Hello,
My parents are scheduled to go for visitors visa in a months time. I have come out of my previous job, and looking for a new job. I have a green card and don't have a problem with that. But, as a sponsor of visitor visas to my parents, is it a must that I have to send them the employment letter? Isn't having enough bank balance to sponsor them enough? I don't want to rush and take up a job which I may not like to just get the employment letter. I have an option of postponing the appointment, which I already did once. Please let me know if it's a must to show the employment letter.

Also if you have taken the appt through VFS I think you are allowed to reschdule only once.

If I can't reschedule, can I cancel the appointment and make a new one?

Thanks for all your responses. I have to think about the alternatives now. My wife is an intern in a hospital and makes less than 50K/yr. I am not sure if I can make her the sponsor, and not me. I wonder if they ask for my employment letter, and don't know what kind of opinion consulate would have about me not being employed right now, though if needed I can produce pay stubs from last 8 years till last month.

My next question is, if I can't reschedule again, can I cancel the previous appointment and make a new one. Or, are they one and the same?

You can cancel and get a new appointment . sponsor must provide current employment letter.
