Vistors Visa for in-laws

Hi,
We are just begining the process of applying for vistors visa for my in-laws and getting familarised with the process.
I have noticed that the interviews are now available from the month of February at the Chennai consulate. I wanted to know if we can go ahead and first take the appoinment and then gather all the required documents for the interview? Or if we need any documents for taking the appoinment.
