My mum's I-94 expires on 22nd april and we have bought her return tickets to India for 21st (after postponing from 17th apr due to the flight disruptions).We filed for her extension in feb and still waiting for approval / denial.

We would like to extend her stay till we get some kind of notice from USCIS. As it would be chaos in the airports where she has a stopover (Paris).
If yes, does her multiple visa gets void, in case her extn is denied?

Whats the best step to take at this moment?

If extension is denied, multiple entry visa is void.

There is not much you can do other than leave whenever it is practical to do so, given the situation in Europe.

What I read is that you immediately contact USCIS on this and they have a solution. You must apply for extension.
