I filled out my dad's DS-160 and sent him sponsor docs. What if my legal status changes by the time of his appointment (say I or one of my siblings gets a green card, or naturalizes)? Would I need to redo my dad's DS-160 and everything else? DS-160 asks for immediate family members' legal status. It will still be correct as on the date of signing and electronic submission, but could become outdated by appointment date, so I am worried.

Should not be a problem (no need to file a new DS160). But if asked, your parents should be able to answer that during interview (that you or your sibling recently got GC/Citizenship approved).- I am not an Attorney, hence not giving any legal advice.
