There is no status change on AP, is it normal?
I assume you have the card by now. Was there any change of status on your AP application (I-131)? Did you receive EAD/AP combo card...
You must wait for 180 date after i140 approval to change job.
You do not need a copy of i-140. You can ask them to share the receipt number. That is enough to change jobs.
