Traveling on a K-1 fiancé visa

My son and fiancé will be getting married in the USA in August . She will be here on a K-1 visa issued in Brussels, Belgium. Can they honeymoon to Mexico or the Caribbean having a marriage license and this visa? Will there be a problem coming back into the USA?

She should apply for Adjustment of Status (I-485) and Advance Parole (I-131) before traveling outside the US as K-1 is a single entry visa.
